Can you eat Underproofed bread?
Under- or over-proofed bread will change the crumb of the bread but has nothing to do with food safety. If it is baked fully it will be safe even if it’s a little dense or too airy.
How do you tell if dough is over or Underproofed?
If your dough is underproofed, there will be too much fuel for the yeast left in the bread and it will continue to rise after the crust starts to set. This will lead to tearing in the crust, and you will get a loaf that looks like this.
What happens if you under proof your dough?
Overproofed the last one didn’t get any oven spring, so it’s quite flat, and you can see that all the bigger bubbles collapsed, leaving only smaller ones. The texture is still airy, and despite flatness, it’s as delicious as the one with the right proofing, even if not as instagrammable.
Can you eat bread that has not risen?
If your dough hasn’t risen, then it’s not worth baking it as it is or it’ll be too dense to enjoy. Instead, you can roll it out very thin and bake it as a flatbread or a pizza. Alternatively, you can dissolve more active yeast in some warm water, then work it into the dough and see if it rises.
Is it OK to eat slightly undercooked bread?

How do you fix Underproofed bread?
If you suspect your dough is under proofed and you’ve already pre-shaped it then just give it an extra-long bench rest before you final shape it.
